One of the best parts of working from home is having time to whip up a hot breakfast every morning — said no one ever. While it seems like we should have time for loads of pancakes and homemade omelets every day, the reality is quite the opposite. Mornings are still rushed and getting the kids to remote school is still a struggle.
Enter: The easiest breakfast sandwich you'll ever make.
This tortilla breakfast wrap is based on a viral egg and cheese bread omelet that calls for a technique inspired by a similar dish made by a street vendor in India. The gist of the hack is that the bread — or in this case, tortilla — is coated and cooked in the egg, making it a part of the wrap itself. This is ideal for a couple of reasons: First, the egg doesn't slip out of the sandwich as you eat it since it's cooked onto the carb. Second, it's a super easy way to flip your scrambled egg layer. The heft of the tortilla in this recipe means the delicate egg won't break during the flipping process.
Finally, this breakfast is totally customizable. We developed this recipe using ham, cheese and spinach, but you can really use any ingredients you like. Go for a Mediterranean vibe with feta, tomatoes and greens. Or opt for another classic breakfast sandwich combo: sausage and cheese. Whatever you choose, the technique and timing will stay pretty much the same, making this perfect for a family of picky eaters.
