The Best Breakfasts to Celebrate St. Patrick’s Day

If you ask us, breakfast is the best (and most underappreciated) part of St. Patrick’s Day — and there’s way more to it than dying your favorite foods green. The following recipes, which include hearty meals and festive baked eats, are sure to start the day on a lucky (and delicious!) note.
For a meal that’s more on the traditional side, look no further than this Irish breakfast. Over-easy eggs are served alongside toast, baked beans, black and white blood sausages, Irish bacon and sauteed mushrooms and tomatoes. If you’re feeling truly ambitious (and extra hungry!) swap the toast for Irish soda bread and serve with good Irish butter and a cup of breakfast tea.

Who needs a pot of gold when you have a stack of pancakes? Spinach lends a bright green color to this charming breakfast, but you can chalk it up to some leprechaun magic if you have little eaters at home. Whole milk and cheese lend a rich, custardy texture to the pancakes, which are delightful with fried eggs and a sprinkle of corned beef hash.

Start the day off on a lucky note with a batch of cheesy clovers. Fresh herbs and sharp Cheddar lend tons of flavor to these shamrock-shaped scones, which are can be enjoyed with eggs or served on their own with a smear of herbed butter.

Corned beef isn’t just for dinner! Use a deli version (or leftovers!) to whip up a salty, crispy breakfast hash. The key is in the potatoes — mash and chill them first, then let the potatoes brown in a skillet to get that perfect texture.
