How to Make Homemade Pizza Dough Like a Pro

Reach for bread flour. Bobby uses bread flour because it gives pizza dough a much crisper crust (you can substitute all-purpose flour for a chewier crust).

A bread hook jumpstarts the kneading process. Mix all of the ingredients together in the bowl of a stand mixer with a dough hook.

Measure the ingredients precisely, but then adjust flour and water as necessary. Depending on the quality of the flour you’re using and the environment’s temperature and humidity, you may need to slightly adjust your water and flour to make the dough come together. If the dough is sticky and looks shaggy, add a little flour at a time until dough comes together in solid ball. If the dough is too dry, add more water.

Knead the dough by hand until a smooth ball forms. Pat the dough into a disk, transfer it to a lightly floured surface and firmly knead the dough several times. Knead it by punching the dough down with your knuckles, folding the dish in half, punching it down again, gathering the edges under themselves and repeating several times until the dough forms a smooth ball.

Allow the pizza dough to rest in an oiled bowl until it has doubled in size. Place the dough ball in a greased mixing bowl, cover it with plastic wrap and let it sit at room temperature until it has doubled in size, about 1 hour.

  • Sugar: Granulated sugar activates the yeast’s fermentation and helps the dough retain moisture, which tenderizes the dough.
  • Salt: Salt is essential for a flavorful crust.
  • Yeast: Instant dry yeast helps the dough to rise.
  • Water: Lukewarm water activates the yeast.
  • Olive oil: adds flavor and moisture.

  1. Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
  2. Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.

Cook’s Note

Using bread flour will give you a much crisper crust. If you can't find bread flour, you can substitute it with all-purpose flour which will give you a chewier crust.
