Instantly transport yourself to the island vacation of your dreams with my take on the classic pineapple soft serve. Sweet, creamy and full of tropical flavors, this family-friendly dessert is what I call a vacation in a glass.
In a blender, combine the frozen pineapple, coconut cream, lime juice, pineapple juice, vanilla ice cream and salt until smooth and creamy (see Cook’s Note). Transfer the mixture to a piping bag with a large star tip and pipe into 5 to 6 glasses. Garnish with the toasted coconut, macadamia nuts and a dried pineapple ring on the side of each glass.
